Hey! Welcome to 2005...I mean, 2022! So I'm new to the blog thing, well... new on this site. I once abandoned blogs because I thought they were lame, and full of wordiness that bored me to tears, yet here I am creating a blog! AH! Hear me out, the only reason is to be able to share recipes and videos with you on a platform that you already know...with some of you who already know ME!
So welcome to my blog of 2022. I promise to keep it short and sweet and straight to the point!
In 2021, I was diagnosed with an autoimmune disease called Hashimoto's Thyroiditis which, if you're not sure what that is, basically, it's an inflamed thyroid. There is no "cure" for this, however you can adjust your lifestyle and eating habits to help ease the inflammation. One of those ways is to eliminate gluten and dairy.
The dairy isn't really an issue, however I love gluten. I love bread, cake, cupcakes, muffins, etc...HELLOOOO, I own a bakery. So basically my life got turned upside down. Of all the things I love in the sweet world, it's chocolate chip cookies. I found this recipe, tweaked it slightly, and here you go. A quick and easy gluten free cookie recipe that satisfies your sweet tooth without putting any added stress to my already stressed out thyroid.
